White Bean Dip!

She followed Love & Lemons' outline and started with cannellini beans, olive oil, and lemon, which are the heart of this dip. This mixture takes mere moments to blend in a food processor, resulting in a dip that’s both creamy and bursting with flavor.   • 1 1/2 cups cooked cannellini beans, drained and rinsed

  • 2 tablespoons extra-virgin olive oil

  • 2 tablespoons fresh lemon juice

  • 1/2 teaspoon lemon zest

  • 1 small garlic clove

  • 1/2 teaspoon sea salt

  • freshly ground black pepper

  • 2 to 4 tablespoons water, if needed

  • 2 tablespoons torn fresh basil leaves

  • 2 teaspoons fresh rosemary leaves

Directions: Place the cannellini beans, olive oil, lemon juice and zest, garlic, salt, and pepper into a food processor. Pulse these ingredients until they are just mixed. While the processor is still running, gradually pour in the water and continue to process until the mixture reaches a smooth consistency. If you like, add fresh herbs of your choice at the end and give it one last blend to incorporate.
